I keep buying bananas. I’m not sure why. No one is eating them. My banana eater used to eat two bananas a day, I think she’s banana-d out. Luckily what they are eating are these Deliciously Healthy Banana Muffins I keep making because well, ripe bananas. So I suppose in the end, they are eating the bananas.
If you’re wondering if I’m going to say banana again, I’ll try not to. What I will tell you is that I’m sitting at my kitchen table looking at an intimidating picture of a curious looking eagle taped to my window. Yes, you read that right. It has startled me a couple of times already today. Let’s hope it also startles the
dumb robin that keeps leaving presents all over my grill! I’ve been fighting with this robin all spring and I think he’s finally made me lose my mind.

I literally had myself in tears over that today. See? I’ve lost it. And if you kept up with that, thank you. If not just scroll down for some yummy banana muffins.
Look at them! They’re so cute! They’ve got ground flax and optional mini chocolate chips, which are obviously not optional, and they’re seriously really good. I’ve made them a bunch. The flax gives them a great nutty flavor. They’re amazing. They also have wheat germ, #healthy! Wait, I’m making them sound disgusting, they have chocolate! Lots of CHOCOLATE! OKAY?!
I’m not kidding. My daughter saw these photos and asked, “when can you make those muffins again?” So if you’re feeling like you need a little something healthy in your life but also like chocolate to go with it, give these banana muffins a try. Or if you’re like me and you love fooling your children into eating things like flax and wheat germ, I’m ok with that too.
Deliciously Healthy Banana Muffins
These banana muffins are banana-y, chocolate-y, and nutty-ish. Also deliciously healthy.
- 1 Cup All Purpose Flour
- 1/2 Cup wheat germ (or omit and use 1 cup ground flax)
- 1/2 Cup ground flax
- 1 Tsp Baking Soda
- 1/2 Tsp Baking Powder
- 1/2 Tsp Salt
- 3 Medium Very Ripe Bananas
- 1/2 Cup sugar
- 3 Tbsp canola oil
- 1 tsp vanilla
- 1 Large Egg
- 1/2 Cup Mini Chocolate Chips optional, but not really
Preheat oven to 350 degrees. Grease 2 - 24 cup mini muffin pans.
In a bowl with a hand mixer, mash the bananas.
Add the sugar, oil, vanilla and egg. Beat until combined.
Dump the dry ingredients on top. Slowly mix in the dry ingredients until just combined. Do not over-mix.
Fold in the mini chocolate chips.
Fill muffin pans with 1 tablespoon of batter.
Bake 15 minutes or until a toothpick comes out clean and muffins are a nice golden brown.
Cool in the pan for 5-10 min before turning out onto a wire rack to finish cooling. Enjoy!
