Oatmeal Chocolate Chip Bars

These cookies are one of my all time favorites.  They rival chocolate chip cookies for my love and affection… which is really saying a lot.  It’s hard to beat a classic.

Have you ever tried to take the easy road and turn the classic chocolate chip cookie into bars?  For me, it just doesn’t work.  They lose something in the translation; they become bland and dry.  These bars have solved that problem.  Classic cookie flavor in a thick and gooey, soft and chewy easy to make bar!  Everything gets mixed in one bowl and you don’t have to scoop, dirty multiple pans, or wait for the next batch.  Easy and less mess?  Count me in!


Honestly, these are almost too easy to make.  I’ve made them so much, I’ve memorized the recipe.  Which is kind of a problem because when a chocolate craving hits, there is no stopping me now.  I mean look at them.  I have dreams about these bars.  My in-house recipe critic states, these are so yummy and toasty and chocolatey!  Delicious, my favorite kind!
I make these a lot for our family road trips.  There is just something so great about having a home-baked treat when you’ve been on the road for hours on end.  The oats mean these are filling and the chocolate is satisfying.  Just enough to get you through to the next rest stop.

These bars are easier to cut when they’re still a little warm, so please, use that as an excuse to bust into these treats as soon as you can! Because let’s be honest, there are few things in life that can surpass the deliciousness of a chocolate chip cookie eaten straight from the oven.  Life is short, don’t wait for cookies to cool.

Oatmeal Chocolate Chip Bars


  • 1 cup butter , softened
  • 3/4 cup white sugar
  • 1 1/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups old-fashioned oats
  • 1 (12 oz) bag semi-sweet chocolate chips
  • 3/4 cup chopped walnuts (optional)


  1. Preheat oven to 375°. Grease a 9×13 pan or line with parchment paper. Place butter and sugars in a medium sized bowl and cream until combined. Add in eggs and vanilla; mix until combined. Add in flour, baking powder, salt, and oats; mix until just combined. Stir in chocolate chips and walnuts (optional). Bake at 375° for 25-30 min until toothpick inserted in center comes out clean and bars are golden brown. Cut into squares while bars are still somewhat warm.  Keep sealed in airtight container at room temp.
