Sweet Noodles

I’m on a quest for toddler lunch ideas. Lunch can be so challenging for me. I have one kid who will eat whatever I put in front of her. Another that eats only three things. Total. All day. Every day. While I don’t want to make separate lunches everyday, I don’t think it’s fair to make an adventurous eater, eat like a picky eater. On the other hand, I know if I make something my picky eater won’t eat, I’m going to wind up making two lunches.  Well, I found this recipe and I thought for sure this would be a winner.  Sweet noodles?! Come on!  

I came across this recipe in my weelicious cookbook and I thought, this sounds delicious. I’m going to try it out. Well, I had to pare the recipe down because the original called for a whole pound of noodles and that is just too much. I made it and let me tell you, they’re fantastic. The flavors are reminiscent of rice pudding. Did you ever eat that as a kid? Warm, creamy, cinnamon-y.  Of course one girl loved it and one ate a few bites and was like, meh.  Can you guess who was whom? I personally could not stop.  Is this a complete lunch? Probably not. But it’s a fun twist on a pasta offering.  I figure with the cheese you’re getting in some protein and dairy.  It’s a good start at least. I had leftover noodles and was able to reheat them and mix up some more a day or two later. My little lady gobbled them up again. Success!

She offers a lot of mild recipes that are fun for the whole family.  The books have inspiration for everything from breakfast to dinner, including snacks, drinks, desserts and even baby purees.  While I didn’t find any groundbreaking material on how to actually get my picky eater to eat what I made, it’s been fun to look at and try some new recipes.  🙂

Sweet Noodles 

adapted from the Weelicious Cookbook 
1/3 lb mini-farfalle pasta
heaping 1/3 cup ricotta cheese*
heaping 1 tablespoon honey*
pinch of cinnamon*
Cook noodles according to package directions.  Meanwhile, mix together the ricotta, honey, and cinnamon.  Toss cheese mixture with warm noodles and serve immediately.  
*the amounts in the cheese mixture can all be adjusted according to taste.
