Got another great slow cooker recipe for ya! This is one of my son’s favorites! So it’s teenager approved, which is really saying something. If you get more than an “I don’t know” out of a teenager, then you know you’re onto something.
I originally found this recipe on a blog I like, The Country Cook. (Thanks, Brandie!) I tried it once thinking, oh, what the heck? It has bacon, maybe it’s good. My skepticism was not in offense to her recipe, but actually the crock pot. I know that tater tots are only good when they’re a little crispy and I just wasn’t sure if the crock pot could do such a thing. The recipe was very simple, not many ingredients and I had never made a casserole like this in the crock pot before, so I thought I would just give it a whirl. Well let me tell you, we were not disappointed. I was shocked to see crispy edges and everything! I didn’t know the crock pot could do that! My son especially loved it. We’ve made this casserole many times. I haven’t changed much except that I’ve added broccoli for my own nutritional peace of mind. The broccoli adds a little color and is quite a nice addition, in my opinion. Although my son would probably prefer I leave it out, I didn’t think it changed the flavor much, so he will just have to get used to it. Sorry son, eat your vegetables. Yes, your vegetables that are covered in cheese and bacon. I’m such a terrible mother, I know.
You can take a few shortcuts with this recipe if you like, such as pre-shredded cheese. Yes, I like to shred my own cheese sometimes. Or bacon bits, although I’ve always just cooked the bacon myself so I can’t attest to the turnout. I have used chicken thighs, chicken breasts, and chicken tenders all with great success. I’d have to say I prefer the tenders, they’re the fastest to cut up and I’m not a huge fan of cutting up raw chicken. So the faster I can get through that task, the better! But it seems chicken thighs are usually pretty cheap, so there’s that.
Once all of your ingredients are prepped, all you do is layer, set your crock pot to low, and hit the road! Can’t beat that!
Here’s the recipe! I hope you try it and enjoy it as much as we do.
Cheesy Chicken & Broccoli Tater Tot Casserole
1 – 32 oz bag frozen tater tots
1 lb boneless skinless chicken, breasts, tenders, or thighs
8 oz cheddar cheese, shredded
6-8 oz bacon, cooked and crumbled
8 oz frozen chopped broccoli
1/2 cup milk
Prep 6-qt slow cooker by spraying with non-stick cooking spray. Dice chicken into 1-inch chunks and season with seasoning salt. Place half of the tater tots in the bottom of the slow-cooker. Layer with 1/3 of the cheese & bacon and 1/2 of the broccoli. Next, put in all of the chicken in an even layer. Then, continue to layer with 1/3 of the cheese & bacon, the other 1/2 of the broccoli, and the rest of the tater tots. Finally, top with the rest of the cheese and bacon and pour the milk over top. Place the lid on the slow-cooker and cook on low for 4-6 hours, or until chicken is thoroughly cooked and edges are nicely browned.
