Roasted Broccoli

I will never look at broccoli the same way again.  Two words.  Roasted.  Broccoli.  Oh my goodness. It should never be eaten any other way.  The first time I made this, it came out of the oven before the rest of our dinner was finished.  I tried a bite.  Instantly, I fell in love.  I kept eating and moaning, “oh this is so good!” My son was looking at me like I had literally lost my mind.  I finally convinced him that I was serious and he should try it.  Before we knew it, we were both standing over the now half empty pan of broccoli still munching away.  Seriously.  If you have never roasted broccoli, do it. Do it today.  Even if you hate broccoli, you might just find out that you don’t.  Your life will be changed forever.  You’re welcome.  


Roasted Broccoli
1 head of broccoli, cut into bite size florets
3 – 4 Tablespoons Olive Oil 
Salt to taste
Salt free seasoning to taste (I often use Mrs. Dash Original Blend)
Make sure broccoli is clean and dry.  Toss with olive oil and a light dusting of seasonings.  Roast in a 450 degree oven for 15 – 20 minutes or until golden brown and caramelized. 
Notes:
-Choose to under season.  It may not seem like a lot but you can easily overdo it.  
-Broccoli must be dry or it will just steam in the oven.
-Use whatever seasonings you want.  Go nuts! You can even sprinkle with Parmesan cheese right when it comes out of the oven.
-You’ve gotta let it brown! The brown and crispy bits are the best!
