Mango Salsa

This is my favorite salsa.  Ever.  It’s stinking delicious.  When I eat it, all I can hear is Weird Al singing ‘just eat it.’ And I do.  I eat it all.  This stuff does not last long around our house.  I’ve been known to make it my lunch on occasion.  It’s that amazing.  Tangy, sweet, spicy and salty all in one glorious bite.  I’m sure you’ll fall in love too if you give it a try.  

On another note, Mangoes are super delicious all on their own.   They are considered a superfood, packed full of over 20 different vitamins and minerals.  They are chock full of Vitamin C and Vitamin A; and are a good source of fiber.  With all of the varieties available, you can find ripe mangoes practically year round.  Isn’t nature awesome?
This would be a great compliment to your next Mexican night.  It would also be a great healthy snack option, especially with some baked tortilla chips! 
Mango Salsa
Yeild: 3 Cups
1 Mango
3 roma tomatoes, seeds removed
1/2 of an onion, red or white or sweet
1-2 large cloves garlic
1 jalapeño, seeded
Handful of cilantro
Juice of 1 lime
1 tsp salt

Remove seed and skin from mango, roughly chop all ingredients, and place into the bowl of a food processor.  Pulse until desired consistency.  Taste and adjust seasoning.  Chill.  Serve with tortilla chips.
